The story
Restaurant JA sits at Tweede Jan Steenstraat 3H in De Pijp, Amsterdam, where chef Julius Busscher cooks a French kitchen shaped by Japanese technique. Gault&Millau rated it 14 in 2026.
Busscher works the open kitchen alone, and his partner Amy Delorme runs the floor. There is no staff. Tables face the kitchen, so every guest watches plates being finished. Lekker describes the room as a living room with a Scandinavian look, oak furniture and warm, natural tones.
Busscher trained in classical French cooking, refined his pastry and bread skills at Savelberg, and later turned to Japanese cuisine. The fish comes from Amsterdam fisherman Hendrik Kramer of Wild 'n Zild, and much of it spends time in a dry-aging cabinet. On the tasting menu that means nigiri of dry-aged red mullet with fennel seed, alongside white asparagus with vadouvan and North Sea crab with kombu and hazelnut. Lekker, which placed JA in its Top 500 in 2026, singled out the beurre blanc sharpened with sambaizu. The finish is a yuzu dessert, which the guide describes with cotton candy spun to order.
Delorme built the wine list around a mix of natural and classic bottles. She suggests a pairing meant to add something to each dish rather than just sit beside it. Sake also appears on the table.
