The story
Arles is a modern French restaurant at Govert Flinckstraat 251 in Amsterdam, and Gault&Millau awarded it 13.5 points for 2026. The kitchen works from a French base, and the dining room has the feel of a neighbourhood bistro in De Pijp.
Chef Numa Muller cooks from the French tradition but does not treat its rules as fixed. Classic technique and seasonal produce form the foundation. The plates play with contrast, such as crisp against creamy or fresh against umami. One autumn course, as Gault&Millau described it, combined pumpkin and shiitake with miso.
Guests can order à la carte or choose a four- to five-course chef's menu. The chef's menu moves through an amuse, several starters, a main and dessert. The monthly changing menu offers vegetarian, fish and meat dishes. The wine list ranges from natural and orange wines to classic Bordeaux and dessert wines, with full or half pours.
The restaurant sits on a quiet street a short distance from the city centre. The atmosphere is that of a neighbourhood bistro with an artistic touch, and the service is warm and unhurried. Michelin lists Arles as Recommended for 2026.
