The story
Mont Blanc is a French restaurant at Govert Flinckstraat 308 in Amsterdam, rated 15.5 by Gault&Millau in 2026. It sits on a quiet street in the Pijp.
Chef Thibault Casasole translates the flavours of his native Haute-Savoie into refined, elegant dishes. Alpine references show up on the menu: Beaufort with onion and buckwheat, or Persan alongside beekridder and carrot. The Michelin Guide also listed the restaurant as Recommended in 2026.
The modern French cooking is vegetable-led in places. Starters include leek with chamomile and truffle, and a marigold egg with mushroom and coffee. Mains run to catfish with parsnip and sourdough miso, and a pot-au-feu with turnip and angelica. Fennel gets a dish of its own, served in several forms.
Desserts range from a cheese trolley to beetroot with lovage and white chocolate. The vanilla millefeuille comes with Hautes-Glaces whisky and oak.
The interior is warm and inviting. Outdoor seating is available, and a private room suits seminars, private dining and parties.
