The story
R21 is a seasonal restaurant at Peperstraat 23 in Amsterdam, where chef-owner Orlando David cooks an evolving menu that earned a Michelin Recommended distinction in 2026.
Orlando David was born in Amsterdam to a Chilean-Colombian family and started cooking at 15. He spent two decades in kitchens across the Netherlands before opening R21 in November 2023. His approach is international and ever-changing, built on high-quality ingredients and a long curiosity about cuisines from around the world. He puts it simply: a chef should not be limited by geography, but inspired by it.
The chef's menu runs four, five or six courses, priced at €68, €83 and €98, with wine pairings from €45 to €65. Recent dishes listed on the site include mackerel with radish, avocado and kiwi, and white Dutch asparagus with green peas, morels and yoghurt. Scallops arrive with hazelnut and mushroom vinaigrette, and lamb with artichoke, baby potato and a vermouth sauce. For dessert, strawberry is paired with elderflower, verbena and chocolate. The à la carte offers steak tartare, sea bass ceviche and a ribeye with classic béarnaise.
R21 occupies a beautifully restored monumental building, where original features sit alongside a sleek modern interior. Gault&Millau awarded it 13.5 out of 20 in 2026, noting a green marble bar, modern chandeliers and a cozy, refined mood. The dining room suits a long, unhurried evening at the table.
