The story
Wing Lei serves Cantonese cooking on the ground floor of the Wynn hotel, Rua Cidade de Sintra, NAPE, Macau. It holds two MICHELIN Stars for 2026, awarded for excellent cooking.
Executive Chef Chan Tak Kwong draws on a wide knowledge of China's regional cuisines. He believes a recipe is perfected through patience, dedication and skill. Knowing every ingredient and technique, in his view, can make a familiar favorite feel new.
Steamed egg white with grouper fillet, 30-year-aged tangerine peel and vintage Hua Diao is a contemporary take on a traditional Cantonese dish. It depends on careful control of time and heat, and the peel adds a tart citrus finish. The barbecued Ibérico Pata Negra pork is marinated in Chinese rose wine and Chu Hou paste, then barbecued three times with maple syrup. The exterior is crunchy and the meat inside is tender. Dim sum has a loyal local following, and Forbes Travel Guide suggests the house tea, a blend of flowers, fruits and tea leaves.
A flying crystal dragon hangs in the main dining area. Forbes Travel Guide, which gave Wing Lei Five-Star status for 2026, describes a yellow and coral palette inspired by Van Gogh's Sunflowers, cloisonné horses, and a view over Nam Van Lake. Nine private dining rooms, each with its own washroom, suit family gatherings and business tables.
