The story
L'ÉTERRE is a counter-style contemporary French restaurant at 2F, 3-6-53 Kagurazaka, Shinjuku-ku, Tokyo. The kitchen holds one Michelin star (2026) and a Gault&Millau score of 16 (2026).
The restaurant is run by Yoshiaki Ito, owner-chef of L'ARCHESTE in Paris's 16th arrondissement. The head chef worked alongside Ito in France after training there from 2010 for two years. He later spent time at Jardin des Sens in Montpellier and ran the kitchen at Hiramatsu Kodaiji in Kyoto for three years.
The French kitchen uses classical techniques, built around produce from producers the team knows well. Firewood, charcoal and straw are used at key points in the cooking, which gives the dishes a smoky, expressive edge. The restaurant seats eight at the counter.
A walk-in cellar beside the counter holds more than 2,000 bottles. The list runs to about 400 wines, with Burgundy at its core. A separate private room seats two to six guests, apart from the counter kitchen.
