The story
Kohaku, a Japanese restaurant in Tokyo, is at 3-5-5 Kagurazaka, Shinjuku-ku, and holds two Michelin stars (2026) for its excellent cooking. The Japanese kitchen here keeps a traditional base and rebuilds it with ingredients and methods that break from convention.
Chef-owner Koizumi was born in Kanagawa in 1979 and trained at Kagurazaka Ishikawa before opening Kohaku in 2008. He aims to present the best ingredients of the moment. The cooking pairs a traditional Japanese repertoire with new flavors that no one has tasted before.
Caviar, foie gras and truffle appear on the menu without the usual Japanese framing. Methods are combined freely, and one dish may be fried in two stages and then simmered or grilled. The dashi, built on katsuobushi and kombu, is kept delicate so it supports the ingredients, and the water is chosen with the same care.
