The story
Kagurazaka Ishikawa is a Japanese kitchen at 5-37 Kagurazaka, Shinjuku-ku, Tokyo, and it holds three Michelin stars for 2026, recognised for exceptional cuisine. The restaurant has a counter and a handful of private rooms, and it serves a set of seasonal dishes built around dashi, fire and steam.
Hideki Ishikawa was born in 1965 in Tsubame, Niigata, and moved to Tokyo at 20. He began cooking at 23 and trained at well-known Japanese restaurants before going independent in 2003. He opened Kagurazaka Ishikawa under its current name in 2008. Gault&Millau has scored the restaurant 17.5 for 2026.
Seven seats face the counter, and three private rooms seat up to four guests while a fourth holds six. The kitchen's own words describe a plain approach: no ornament, no excess. A drop of dashi, a moment over the flame and a dish rising through steam are the things the menu leans on. The aim is flavour that softens slowly and spreads through the palate.
