The story
Kanda is a Japanese restaurant on the first floor of the Toranomon Hills Residential Tower, 1-1-1 Atago, Minato-ku, Tokyo, and it holds three Michelin stars in the 2026 guide.
Chef Hiroyuki Kanda took the restaurant's name from his family. As a child, he heard his mother answer the phone of the family business with a plain "Hai, Kanda de gozaimasu." After 18 years in Motoazabu, the restaurant moved to Toranomon, and he still calls it home. The 2026 Gault&Millau score of 19 sits beside the Michelin recognition, and the restaurant's own site cites fifteen consecutive years of three stars.
The move did not add seats. It stayed at nine at the counter plus one private room, and the extra space went to a waiting room, an entrance hall and a separate door for private-room guests. The counter is Kasuga cedar. Behind the chef's place stands a floor post of old diamond-patterned Tenpyo timber with Shosoin lineage. Sugimoto chose diffused surface lighting with no point sources, so the plates and the chef both stand out.
Guests pass a roji-style garden with an old well frame, an Inari shrine above a moss bed and a cedar-bark fence on three sides. All furniture is custom, including counter stools of bamboo over an iron core. The art is by Sugimoto himself, with a hinoki-framed "Kegon Falls" at the entrance of this Japanese kitchen.
