The story
Brasserie Cuvilliés is an Alpine-inspired brasserie at Kardinal-Faulhaber-Straße 1 in Munich, inside Rosewood Munich. The Michelin Guide listed it as Recommended in 2026. The kitchen cooks Bavarian and Alpine dishes alongside Mediterranean and International plates, served seven days a week.
Head chef Matthias Brenner leads the team and runs the brasserie day to day. Born in Augsburg, he has held several senior posts in fine dining. His cooking mixes classic, modern and traditional technique, with a focus on top ingredients and sustainable produce. The Schlemmer Atlas awarded the restaurant 2.5 Kochlöffel in 2026, noting oysters and champagne on the same menu as Wiener Schnitzel and bouillabaisse.
Through Rosewood's Partners in Provenance program, the kitchen buys from nearby farms and suppliers. Fish comes from Aumühle, meat from Tegyu and Tremmel, and bread from the Brantner bakery. Caviar is sourced from Kniewas-Austra, and the organic eggs come from Seepointherhof in Landshut.
The dining room carries a large ceramic work by Munich artist Angelika Maria Stiegler, titled "Qu'ils mangent De La Brioche." A private dining room seats up to 12 guests and sits close to the main restaurant, suited to birthdays, family celebrations and business dinners.
