The story
Waldschenke in Bellmund, Switzerland, is a Provençal French restaurant at St. Niklausstrasse 30, and Gault&Millau awarded it 12 points for 2026. The house has been run by the Scheibli family for nearly 40 years, and the menu stays close to its Provençal roots.
Henri Scheibli, now over 80, has kept the Provençal kitchen at the Waldschenke for decades, and Sascha Jeremic manages the business. The family's cooking goes back further. Grandfather Albert Scheibli started in Biel more than a century ago and created the Entrecôte Chez Nous about 80 years ago. Everything is made in house, fresh, with seasonal and regional ingredients.
The Entrecôte Chez Nous is fried at the table in a copper pan with herb butter and served with a hearty potato gratin. Other classics include mussels in white wine sauce and dorade fillet with vegetable Camargue rice. Bouillabaisse in the Marseille style is available on pre-order, and the wine list leans French.
