The story
Restaurant Schote occupies the renovated Diepeschrather Mühle at Diepeschrather Weg 80 in Bergisch Gladbach, on the edge of Köln. Chef Nelson Müller runs this fine dining room, which the Schlemmer Atlas awarded 4 Kochlöffel in 2026.
Schote is Müller's flagship, and the format is fixed. Guests choose between two menus, one of them vegetarian, and the kitchen does not cook à la carte. The tasting runs six or seven courses and opens with an amuse-bouche flurry. The cooking is approachable and French-influenced, and it is at its best when Müller and his team break open a classic.
The clearest example is a golden trout from a nearby farm. It comes with cucumber-lime ice, a full-bodied almond broth and brown butter foam. The wine list leans toward Europe and carries many big names.
Müller moved his restaurant here from Essen, and the room changed with it. Urban polish has given way to a playful rusticity, with exposed ceiling beams, quiet jazz and an open pass. The Michelin Guide listed Schote as Recommended in 2026. In fine weather the mill terrace is open for coffee, cake or a glass of wine.
