The story
Ahlmanns is the fine dining restaurant of the historic Hotel Kieler Kaufmann, at Niemannsweg 102 in Kiel. The German and Nordic kitchen holds one Michelin star (2026), and chef Lasse Knickrehm leads the cooking with regional ingredients.
Knickrehm draws ideas from around the world but builds the menu on products from the region. Meals run from three to eight courses, and a vegetarian option is available on request. The kitchen works closely with regional suppliers, which the restaurant credits for the freshness of its ingredients.
A meal can begin with a potato waffle topped with dike cheese and sorrel. North Sea sea bass follows, served Mediterranean-style with chorizo, quince and sauerkraut. Old dairy cow comes with port wine and Jerusalem artichoke, and the cheese course uses produce from affineur Waltmann in Erlangen.
Dark wood, bare tables and dimmed lighting set a calm mood in the villa dining room. The house sits in the Düsternbrook villa district near the Kiel Fjord. In summer, guests can eat on the terrace overlooking the water. The wine list offers 100 bottles, with 10 available by the glass. Schlemmer Atlas awarded the restaurant 3.5 Kochlöffel (2026).
