The story
ICHI is a Japanese restaurant at Falckstraße 16 in Kiel, and the Michelin Guide lists it as Recommended for 2026. The kitchen works in a Japanese Contemporary style, pairing sushi with warm dishes built on seasonal regional produce.
Tomohisa Izuta leads the kitchen, according to the Schlemmer Atlas entry, which awards ICHI 2.5 Kochlöffel for 2026. The owners, Shuichi and Yuko Umino, opened the earlier restaurant ann in 2010 as the first authentic Japanese restaurant in Kiel and Schleswig-Holstein. A team of Japanese cooks now carries that approach forward at ICHI.
The sushi uses fresh seafood from Kiel and the surrounding region. Guests can order à la carte or assemble a five-course menu from the same dishes. The warm plates are creatively interpreted, so the meal can be as long or as short as the table wants.
The owners describe their approach as ichi-go ichi-e, a phrase meaning that each meeting happens only once. The dining room is quiet and stylish, with architecture meant to keep attention on the food. Takeout is also available.
