The story
GOLVET, at Potsdamer Straße 58 in Berlin, holds one Michelin star (2026) for its international kitchen. The name is Swedish for "the floor," and the dining room sits on the eighth floor, 32 meters above the city.
Nicholas Hahn, Berliner Meisterkoch 2025, runs the kitchen with sous chef Jana Biondić. The restaurant describes the cooking as product-led, with fermentation adding depth and flavors kept clear. Der Feinschmecker rated it 3.5 in 2026 and singled out a tomato-flavored meringue "pizza" topped with burrata, dried-tomato chutney, basil essence and roasted capers. Guests can book the chef's table to watch the open kitchen work.
The interior is kept deliberately dark so the skyline outside takes over. Windows look toward the Staatsbibliothek and Tiergarten, with the Reichstag dome, Philharmonie and Sony Center in view. Nine street-art artists have also left work in the room, set against the restrained lines of the design.
Bar manager Thomas Isabella borrows Japanese fermentation methods for the cocktails, using miso, shoyu and lacto-fermentation. The Holy Mary starts with Parmigiano-washed vodka. Seoul Tropique pairs rum with pineapple kimchi. An alcohol-free pairing runs through teas such as hojicha with pear and ponzu, a pleasant option for those skipping wine.
