The story
Restaurant August, at Johannes-Haag-Straße 14 in Augsburg, earned two Michelin Stars in 2026 for its avant-garde cooking. Christian Grünwald runs the kitchen on the first floor of the Haag villa.
Grünwald takes his cues from nature, from regions, the sea and the garden. Courses carry riddle-like names such as "Wenn das Meer das Land verdeckt" (When the Sea Covers the Land) or "Sehnsucht" (Longing). He also comes to the table himself to explain what is on the plate.
The tables work like illuminated display windows. Decoration and edible components sit beneath the glass top, and each course's parts are first shown in a lit drawer under the tabletop. The upstairs salon holds only four tables, so the evening feels like a small piece of chamber theatre.
The listed Haag villa dates from 1877 and has high ceilings, parquet floors and art on the walls. Both terraces look onto the park. Schlemmer Atlas gave the house four Kochlöffel in 2026 and singled out the setting.
The wine list is short and fairly conventional, while the non-alcoholic pairings are well regarded. On Sundays the villa serves a four-course lunch at €130, or €150 with wine pairing.
