The story
BÒME is a small Mediterranean restaurant at Ul. Dinka Šimunovića 14a in Split, rated 14.5 by Gault&Millau in 2026. It sits just above Žnjan beach, and its terrace looks over the sea.
The meat tartare is made from aged rump steak and served under a smoked glass lid. It comes with fermented purple onion cream and homemade mayonnaise. A fish tartare stays on the menu too, and Gault&Millau names both among the best dishes. The soups change often, including a pumpkin soup with hazelnut crumbs and a special cow's cheese.
The Mediterranean kitchen reworks local dishes with sauces, creams and emulsions. Slow-roasted pork belly comes with celery puree, and roasted veal with mashed potatoes and demi-glace. Maccheroni is paired with veal cheek ragout. The tiramisù looks different from the classic, but the flavours are familiar. The Michelin Guide lists BÒME as Recommended for 2026.
