The story
Šug is a Dalmatian restaurant at Tolstojeva 1a in Split, set right beside the walls of Diocletian's Palace and listed as Michelin Recommended in 2026. Locals have favoured it for years, and in summer visitors come looking for authentic regional cooking.
Duje Kanajet (Gault&Millau Croatia Young Talent Trophy 2018) and Mateo Kordić run the kitchen together. Their menu rests on tradition, yet the execution is contemporary and precise. Ingredients are local and seasonal, and the dishes change daily. The kitchen works with several family farms, and Gault&Millau scored the restaurant 13.5 in 2026.
Tećada is a dish braised in a pot (teća in Dalmatian dialect), and Šug serves it for two with white fish, shrimp, oysters and pasta. A royal version uses Japanese A5 beef. Fish arrives baked, with clean texture and plenty of juice. Cooking over live fire gives other plates their character, among them duck breast with truffle, Argentine Black Angus rib eye and a smoked risotto of mussels and swordfish. Pašticada and veal risotto round out the meat side.
The space is small, modern and unfussy, with an outdoor terrace. The bread is baked in the restaurant. Desserts are few and often borrow from local cooking. The wine list leans on Croatian labels, and some bottles are also poured by the glass.
