The story
De Fakkels is a modern cuisine restaurant at Hasseltsesteenweg 61 in Sint-Truiden, rated 15 by Gault&Millau in 2026. Chef Seppe Bleus and his wife Liese Bams run it together.
Seppe and Liese met at the hotel school in Herk-de-Stad. Seppe joined De Fakkels as pastry chef and worked his way up to head chef. Liese started in the kitchen, moved on to chocolate and ice cream, and now leads the dining room. Gault&Millau praises how, as new owners, they keep the founders' tradition going while adding touches of their own.
The kitchen is honest, with a worldly touch, and built on seasonal and regional produce. The five-course menu (€108) opens with hamachi crudo, cucumber, green apple and coriander. It continues with sea trout mi-cuit and sébaste with fennel and preserved lemon. Lamb from Sisteron with green asparagus and panisse follows, then roasted peach with almond, raspberry and vanilla. A four-course version costs €89, and on Saturdays only the five-course menu is served. Vegetarians are welcome, and the Michelin Guide lists the restaurant as Recommended for 2026.
The restaurant occupies a handsome old townhouse. Inside, the atmosphere is modern and warm, and the service has a family feel.
