The story
Caillou sits at Knokkestraat 282 in Knokke-Heist, Belgium, where the modern cuisine kitchen earned a Gault&Millau score of 15.5 for 2026. The restaurant is run by a small team that grew up together at Sel Gris, and the room reflects that calm, practised rhythm.
Sander Van de Walle, born in 1986, leads the kitchen. He learned to cook in his mother's kitchen and has a particular fondness for desserts, which he credits with making him precise across every plate. He spent about ten years at Sel Gris, eventually becoming right-hand man to Frederik Deceuninck, and trained with several Benelux and French kitchens before that. In 2016 he placed second at the Saissonier Patisserie Benelux competition, and in October 2018 he won the Prosper Montagné title as Belgium's first chef.
Camille Steenhuyse works the floor as hostess, drawing on eleven years at Sel Gris. Frederik Deceuninck, the concept's originator, steps back from the pans and lets the two of them run the restaurant day to day. Gault&Millau praised how a modern terraced house, with little view to the outside, becomes a quiet, comfortable retreat, and noted how well the team works together.
