The story
Le Pigeon Noir is a Belgian bistro at rue Geleytsbeek 2 in Uccle, Brussels, and it holds one Michelin star in 2026. The cooking sits in classic French and country-kitchen territory.
Benoît De Mol cooks from a recipe he borrowed from his father, Henri: unfussy and meaty. The house pigeon salmis is slow-cooked in red wine with a lemony sage jus, and pigeon liver comes on toast. Veal brains arrive barely poached, with tartare sauce and corn salad. For dessert there is homemade sabayon or a café Liègeois ice cream. A small box of Delacre wafers and cuberdon candies comes with the bill.
Retro ad posters, pigeons everywhere, wooden booths and red faux leather high chairs make up the dining room. Le Fooding lists the bistro for 2026 and notes that it has barely changed in decades. Come with your grandmother, and she will feel at home.
