The story
Siphon in Brugge serves traditional Flemish seafood at Damse Vaart-Oost 1 in Oostkerke, and Gault&Millau awarded it 13 points in 2026. The restaurant sits in the polder landscape between three canals, where the kitchen has built its reputation on daily fresh eel.
The house specialty is eel, served jellied, smoked on toast, fried, or in Napolitaine, cream or green herb sauce. Zeeland oysters come in portions of six or nine, both the round creuses and the flat variety. Lobster appears as a soup, as Bellevue with garnish, or as half a lobster cooked over a wood fire with garlic butter.
Gault&Millau notes that oysters, eel, lobster and grilled beef remain the draw, and that pheasant and hare join the menu in autumn. Michelin lists Siphon as Recommended for 2026. Reservations are advised, especially in the cooler months. The restaurant has outdoor seating and also hosts private parties.
