The story
Bruut, at Meestraat 9 in Brugge, is a seasonal modern cuisine kitchen that earned 16/20 from Gault&Millau in 2026. The menu is a fixed set that changes with the seasons, so the kitchen decides the order of the evening.
Bruno Timperman runs the kitchen and sets its direction. The house describes its approach as Flemish cooking, with terroir and tradition given a contemporary treatment. Guests cannot request changes to the menu, though a meat course can be swapped for fish if the kitchen is told in advance.
A Le Fooding review described a mussel toast with cauliflower cream and pickled mustard seeds, and a radicchio raviolo wrapping langoustine tartare with bergamot zest. Cod was slow-cooked and finished with codium oil and plankton salad. Dessert paired carrot ice cream with citrus compote and meringue. Lunch is six small courses and dinner is nine, so the sequence carries the meal.
Graffiti by Denis Meyers covers the walls, and waxed concrete details run through the space. Le Fooding noted the tattoos and banter of the owner, which give the room a loose, unpretentious tone.
