The story
Auberge de Herborist sits at De Watermolen 15 in Sint-Andries, Brugge, where a farm-to-table kitchen earned a 14 from Gault&Millau in 2026. The setting is rustic and rural, on the green edge of the city.
Chef Alex Hanbuckers serves a menu of three to five courses, with choices along the way. Tuna comes mi-cuit, given an Asian turn by ponzu and ramen noodles. Michelin also lists the Auberge as Recommended for 2026.
The outdoor dining area reopens around mid-April 2026. It is set between fields, trees and herbs, and works for an apéritif, lunch or dinner. The team asks guests to check the weather forecast with them before booking a table outside.
