The story
Floris is a modern French restaurant at Gistelsesteenweg 520 in Sint-Andries, Brugge, rated 14.5 by Gault&Millau in 2026. Chef Floris Panckoucke runs the kitchen.
Gault&Millau describes a stylishly renovated corner building where Panckoucke cooks with a focus on product and flavour, without fuss. The menu follows the season and the market, built around North Sea fishermen and farmers from the region. Michelin also lists the restaurant as Recommended for 2026.
The seasonal menu (€79) has included mackerel "lisette" with avocado and beetroot, white asparagus from Klerken with hand-peeled shrimp, and veal loin with peas and morels. Dessert was strawberries from Sint-Andries with passion fruit and rhubarb. The à la carte list adds North Sea crab ravioli, pigeon from Anjou, and turbot served on the bone for two.
Ox tail simmered in brown beer goes into small spring rolls, served with curry mayonnaise. Gault&Millau singles them out as a first sign of the kitchen's generosity. Other bites include a hand-peeled shrimp croquette and flat Zeeland oysters.
Lunch from Tuesday to Friday is a two-course menu at €39. When the weather allows, aperitifs, lunch and dinner move to the inner terrace. A private dining option is available for larger tables.
