The story
Demain is a modern French restaurant at Boulevard de Wielingen 49 in Cadzand (Vlissingen), awarded one Michelin star in 2026. It opened in early 2024 in the space once home to Pure C, together with the hotel in the same building.
Dani Hoefnagels cooks an inventive Mediterranean-leaning menu built on local, seasonal ingredients. His partner Romée Monkel runs the room as hostess. The name is French for "tomorrow", a nod to the restaurant's forward-looking approach. Lekker500 placed Demain at number 98 in 2026.
The tasting menu, Wonder of Nature (€185), moves through hamachi with cashew, North Sea crab with pumpkin and horseradish, coquille with sauerkraut and eel, and roe deer with artichoke and beetroot. Dani's signature dish of langoustine, paella and saffron can be added for €45. A seasonal card offers three or four courses at lunch and dinner (€125 or €170), and there is a vegetarian menu. On Friday and Saturday evenings, only Wonder of Nature is served.
The dining room is open and light, with a view over the dunes. Sommelier Benjamin van Goethem chooses the pairings, and the team tastes new combinations of glass and plate daily. Non-alcoholic pairings are also poured, such as pressed green apple infused with sage.
