The story
Margaux, at Kornmarkt 7 in Limburg an der Lahn, is a French restaurant that Michelin recommended in 2026. The restaurant sits in the old town, inside a half-timbered building that dates to the 14th century.
Fabian Sollbach is the owner and chef de cuisine. The kitchen works with handpicked suppliers, and the bread is brought in specially for the house. Vegetables, fish and meat arrive fresh. The menu reinterprets traditional dishes in new ways, with combinations that are meant to be complex, balanced and pleasing to look at.
The à la carte menu has yellowfin tuna with yuzu, umeboshi plum and coriander, and potato gnocchi with pear, Vacheron Mont d'Or and nuts. Roasted Australian prime beef comes with parsley root, mushrooms and topfen dumplings. For dessert, the kitchen serves a tarte tatin made with pineapple, served with coconut and passion fruit. Guests who prefer not to choose can order the surprise tasting menu, which runs four or five courses.
The exterior keeps its half-timbered character, while the interior is clean-lined and cosy. Every piece of porcelain was chosen individually, from the menus and furniture to the plates. The Schlemmer Atlas awarded it 2.5 chef's spoons for 2026, and its review describes relaxed but high-quality French cooking served on stoneware and Limoges porcelain.
