The story
Eleven Madison Park serves contemporary American cooking at 11 Madison Avenue in New York City, and holds three Michelin stars in the 2026 guide.
Chef and owner Daniel Humm, a native of Switzerland, has steered the restaurant through several reinventions. The World's 50 Best Restaurants named it number one in 2017. In 2021 he reopened with a fully plant-based menu, and in 2022 it became the first restaurant in the world to earn three Michelin stars for one. Dominique Roy joined the team in 2015 and has been chef de cuisine since 2021.
Since October 2025 the tasting menu has kept plants at its center while adding select animal products to certain courses. Fish, meat and a honey-lavender-glazed duck are among them. The kitchen's plant-based vocabulary stays in play, with almond-milk ricotta, sunflower butter, koji stocks and whipped cashew cream. Vegetables come in part from Magic Farms, the restaurant's own upstate farm.
Executive Pastry Chef Laura Cronin leads the dessert team. She also created the Madison Square, a cross-laminated pastry filled with a seasonal ganache or jam. It is the signature of Bake It Nice, a pop-up the pastry team started in 2023 outside the front doors.
The restaurant occupies a 1920s art deco building that was once a MetLife warehouse, facing Madison Square Park. The artwork was made for the space. Look for Rita Ackermann's chalkboard painting and Daniel Turner's stone monument, built from melted-down items from the old kitchen. Music plays at an audible volume, and the service staff adjust to whether a table wants conversation or quiet.
