The story
Telezzüz is a vegan fine dining restaurant at Kuşbakışı Caddesi No:16 in Kuzguncuk, Üsküdar, Istanbul. Gault&Millau scored it 14.5 in 2026, and the Michelin Guide lists it as Recommended for the same year.
Chef Bahtiyar Büyükduman opened Telezzüz as the first vegan fine dining restaurant in Türkiye. The kitchen works from a principle of respect for nature, and each menu follows what the season provides. Local produce leads, while techniques and flavors from other cuisines find their way into the recipes.
The dish names read almost like short poems. "İmparatorların Kuşkonmazı" (the Emperors' Asparagus) points to history, and "Çilek Hakkında Her Şey ile Küba'ya Yolculuk" turns a strawberry into a trip to Cuba. The menu changes with the seasons, with a spring selection currently listed, and a tasting menu sits beside separate wine and bar lists.
The team tends its own vegetable garden and cooks to a zero-waste principle. The restaurant sits inside the Koç Community Sports Club grounds, in the Abdülmecid Efendi Grove. Outdoor seating, parking and air conditioning are available.
