The story
BİZ İstanbul occupies the Atatürk Kültür Merkezi at Mete Caddesi No:2 in Gümüşsuyu, Beyoğlu, where its Istanbul kitchen earned a Gault&Millau score of 13.5 for 2026 and a 2026 Michelin Recommended mention. The restaurant is split into three spaces, each with its own menu and mood.
Has Salon is the formal room, with views over the old peninsula. Its kitchen revives recipes drawn from archives and presented on starched tablecloths. Gault&Millau describes dishes once cooked in Istanbul's palaces, served in a form suited to their period.
The Lokanta draws on Istanbul home cooking and the tradesmen's eateries of the city. Slow-cooked casseroles, soups, olive oil dishes and stuffed vegetables anchor the menu. Pastries, buns, desserts, sherbets and compotes follow. The restaurant says several of these flavors were close to being forgotten.
The bar serves Istanbul street specialties alongside signature cocktails, with curated wine and raki menus. The open kitchen sits in view, and wood-fired ovens and charcoal grills do much of the cooking. Gault&Millau notes that older Istanbul drinks are reinterpreted with modern methods.
