The story
Jacques Restaurant serves seasonal French cooking at Rue de la Barre 5 in Lausanne, and Gault&Millau rated it 15 in 2026. Chef Jacques Allisson moved here to a more elegant address with a terrace in the middle of the city.
Gault&Millau describes the kitchen as creative, contemporary and technically precise. The à la carte list is short, and a four- or five-course menu découverte is also offered. Michelin lists the restaurant as Recommended for 2026.
A spring meal reported by the guide began with a cucumber salad, Greek yogurt, mint and smoked haddock. Wagyu carpaccio followed, with red onion glace, satay crémeux and chili oil. Mains included beef shoulder with polenta, wild garlic foam and morels, and wild-caught monkfish on a bean and pea crémeux. Dessert was vanilla foam over sour cherry sorbet with speculoos.
At midday the market menu changes twice a week with the season. It costs CHF 39 for three courses and runs Tuesday to Friday. Groups of 11 to 20 can book the vaulted cellar privately. The wine list draws on the region and Switzerland, with bottles from further afield and a few finds, by the glass or bottle.
