The story

Florilège Tokyo: Modern French Tasting Menus at Azabudai Hills

Florilège is a French restaurant on the second floor of Garden Plaza D in Azabudai Hills, 5-10-7 Toranomon, Minato-ku, Tokyo. The Michelin Guide awarded it two stars for excellent cooking in 2026, and the kitchen runs a tasting-menu French menu with a strong vegetable focus.

Chef and cooking style

Hiroyasu Kawate grew up in a family of cooks. He trained at Le Jardin des Sens in Montpellier and at Quintessence in Tokyo before opening Florilège in 2009. The restaurant moved to Azabudai Hills in 2023.

He sources locally where possible, and his plant-forward menus use fewer meat and seafood dishes and more vegetables.

The table and the menu

Dinner is a set tasting course. Guests choose either a meat or a vegetable main when they book, but the vegetable option does not make the full course vegetarian or vegan.

Guests share a 13-metre communal table in the table d'hôte style, talking with the chefs and staff as the courses arrive. For birthdays and anniversaries, the kitchen can add a beetroot flower to the plate, ordered at the time of booking.

Drinks and pairings

Alcoholic and non-alcoholic pairings are offered with both lunch and dinner. The dinner course is priced at 23,000 yen, tax included, with an additional 10% service fee.

Ringside seats:At Florilège, chef Hiroyasu Kawate serves his creative tasting menus of contemporary French-accented cuisine in a spacious, theatrical setting. The plush counter seating running three sides of the expansive open kitchen allows guests to watch their dishes being prepared, while also interacting directly with the front and back-of-house teams throughout the meal. Cooking in his DNA:Kawate comes from a family of chefs: as a child, he never had any doubt that he wanted to follow the same path. After working at Le Jardin des Sens in Montpellier, France, for a year, he returned to Tokyo in 2007 as sous chef at Quintessence under chef Shuzo Kishida. He opened Florilège in 2009, won two Michelin stars in 2018 and five years later, was voted by his peers as the recipient of the Inedit Damm Chefs' Choice Award 2023, as part of Asia’s 50 Best Restaurants. In the autumn of the same year, the restaurant was relocated to the ultra-modern Azabudai Hills, the tallest building in Tokyo. Sustainability on the menu:Kawate has a passion for sustainability. Wherever possible he uses locally sourced ingredients, imbuing his menus with a distinctive Japanese character. Nowadays, Kawate and his team are committed to serving less meat and seafood and more vegetables, reflected in the plant-forward tasting menus. Offshoots and side projects:In February 2021, ex-Florilège pastry chef Miho Horio opened her own dedicated dessert counter, Azuki to Kouri (red beans to ice), specialising in next-level kakigori (shaved ice) creations. Meanwhile, Den Kushi Flori, Kawate’s joint venture with his longtime friend, and fishing buddy, chef Zaiyu Hasegawa from Den, is also thriving, having also expanded to Bangkok.
