In the chic restaurant, Chef Freddy Garanjoud serves precise, local, and seasonal cuisine on both the à la carte menu and the five-course tasting menu, impressing with its clear vision and flawless craftsmanship. The amuse-bouche featured small waffles filled with leek and mayonnaise, followed by an exquisite vegetarian dish: grilled cabbage stuffed with ricotta and spinach, accompanied by a wonderful black garlic mayonnaise and an equally excellent beurre blanc. The tuna tataki was elaborately presented as a mosaic of tuna, beetroot, strawberries, and wild garlic oil. The main course impressed with tender pork paired with caramelized Treviso endive and a tangy raisin sauce. The final masterpiece was delivered by the dessert: vanilla foam whipped from a siphon, served with pear compote and roasted peanuts. A magnificent wine list features numerous natural wines and an excellently curated selection of cru wines served by the glass.
