The story
F.P.Journe Le Restaurant serves modern French cuisine at Rue du Rhône 49 in Geneva, and holds one Michelin star in the 2026 guide. Watchmaker François-Paul Journe opened it with chef Dominique Gauthier, who spent three decades at Le Chat Botté.
Gauthier works in the classic French register of stocks, sauces and precise cooking, then adds Mediterranean notes and a few accents from his travels in Thailand. Gault&Millau gave the kitchen 16 points in 2026, praising dishes such as Normandy scallops with ponzu and a veal breast with black garlic. His suppliers are local: vegetables from Pierre Gallay, Nant d'Avril poultry and beef from the Minder family.
The carte lists signatures such as frogs in tempura with spinach and garlic milk mousse, and roasted scampi with kadaif. Mains run to pan-fried turbot with artichokes and truffles, or Simmental beef with Madagascar wild pepper, one of Journe's favourites. Tasting menus come in four, five or seven courses. Desserts include a soufflé flambé with two chartreuses and a floating island with pistachios and caramelized hazelnuts.
The dining room was once the Bavaria brasserie. Its dark oak panelling and tall mirrors date to 1942 and have been listed since 2012. Tables carry the names of artisans instead of numbers, and framed prints show watch mechanisms. The wine list leans on Geneva producers, and the house offers its own cuvées, including a Pessac-Léognan from Château Seguin.
