The story
Pavus, in Celje, cooks modern cuisine at Cesta na Svetino 23, 3270 Lasko, Slovenia, inside the walls of Grad Tabor Laško. The Michelin Guide awarded the restaurant one star in 2026, and the tasting menu is the main way to eat here.
Marko Pavčnik, born in 1980, is a self-taught cook who began his professional path at this castle. He works with local producers and with ingredients gathered from the forest nearby, so the menu shifts with the season. Sous chef Mitja Mikloška works alongside cooks Ricardo Galhoz and Žiga Koprivc.
Gault&Millau singled out the Ptuj onion, served with a fried egg yolk and moving from velvety purée to thin, crisp lace. The Adriatic amberjack arrives in beer ponzu with spruce oil. Dessert combines shiso basil ice cream, sour cherry cream, pickled plum and caramel sponge cake. Tasting menus run from five to ten courses, priced from 85 to 135 euros per person before wine.
The dining room sits within the medieval castle walls, and the restaurant also offers outdoor seating. The wine room holds around 150 labels, both local and international, and a separate list covers Slovenian and foreign fruit spirits. Wine pairing can be added to any tasting menu.
