The story
Źródło is a modern Polish bistro at Targowa 81 in Warsaw's Praga Północ district, a few steps from Wileńska metro station. The Michelin Guide listed it as Recommended in 2026.
The kitchen reworks Polish tradition by season and builds dishes around local ingredients. Brussels sprouts arrive with leek, melted cheese, walnuts and cranberries. A pumpkin brioche is paired with marinated pear, bryndza and sea buckthorn. The kopytka, dressed in browned butter and served with six-month-aged Bursztyn cheese, has become the dish most associated with the place. Gault&Millau gave Źródło 11 in 2026.
The list leans toward natural wines, orange wines among them, with a focus on Polish producers and a few bottles from further afield. Beers and ciders also come mostly from Poland. Staff can talk you through pairings without fuss.
Simple wooden furniture sits under high ceilings, with wine shelves, art prints and plants throughout. Bright orange tiles cover the wall opposite the entrance. The mood is relaxed and homely, closer to a neighborhood bistro than a formal dining room.
