The story
Bez Gwiazdek is a modern cuisine restaurant at Wiślana 8 in Warsaw, listed as Recommended by the Michelin Guide in 2026. Chef Robert Trzópek cooks regional Polish food in a contemporary form.
Each menu turns to one part of Poland. A winter menu focused on Silesia and Opole, with hekele built from parsnip and fermented white asparagus, and oberiba with kohlrabi, mushrooms and black garlic. Seasonal plates have included kvass with oscypek from Podhale. The tasting menu also comes in a vegetarian version.
Trzópek has worked at Le Manoir aux Quat'Saisons, Noma and El Bulli. He brings French and Scandinavian influences into Polish cooking and keeps the plates minimal. Gault&Millau scored the kitchen 14 in 2026.
The restaurant sits in Powiśle. Wooden tables, natural materials and muted tones fill the small dining room, and the lighting stays low.
The list leans toward Central and Eastern Europe, with organic and biodynamic bottles from small producers. Pours come in 75 ml measures, so pricier wines are easier to try. Pairings are offered with each tasting menu, though guests are free to skip them.
