The story
Fierro serves Mediterranean cooking at C/Doctor Serrano 4 in Valencia, and the restaurant earned one Michelin star in 2026. The kitchen is built around tasting menus and modern Mediterranean cooking shaped by Argentinian roots.
Carito and Germán lead the kitchen. Their manifesto describes a contemporary take on Spanish cooking that keeps its Argentinian roots in view. The team calls the restaurant a melting pot, with cooks from different cultures working toward one aim: a noble cuisine that respects the seasons and local producers. The kitchen describes its values as respect, passion, honesty and commitment.
The main menus are tasting menus with fixed prices: Memoria at 155 euros, Los Años at 135 euros and 10 Años de Fierro at 195 euros. Each has a vegetarian version, and drinks are not included. Pairings start with Armonía Botánica at 70 euros, a set of non-alcoholic drinks made in house for each dish. Travesía at 90 euros follows a path through world wines, and De Allá y de Acá at 115 euros traces Argentinian and Spanish regions. Equilibrio, at 90 euros, blends the wine and non-alcoholic options.
The We're Smart Green Guide nominated Fierro for its 2024 Discovery Awards and later awarded the restaurant 5 Radishes (2026). Two of the menus are fully vegetarian, built around the Valencian vegetable garden and adapted from signature dishes without meat or animal fat. Corn appears as a dish that recalls the restaurant's roots, and the team says it works to cut food waste and buy from nearby growers.
