The story
Mayta sits at Av. Mariscal La Mar 1285 in Miraflores, Lima, where chef Jaime Pesaque runs a contemporary Peruvian kitchen. The restaurant placed 39th on The World's 50 Best Restaurants list in 2025, and its nine-course tasting menu is built around native Peruvian ingredients.
Pesaque opened Mayta in 2008 and has kept its focus on traceable local produce. His cooking pairs contemporary techniques with Peruvian ingredients. He has worked for years with paiche, an Amazonian fish, and his Yachay project looks at recovering biodiversity in Ica's desert region.
The nine-course Mayta Experience centres on Peruvian ingredients. Corn arrives with chullpi and quinoa flower, and ribs come with potatoes, cushuro and chincho, a local herb. Paiche is sliced paper-thin and shaped into a rose that stands in for ham. The à la carte list includes an Amazonian ceviche and a muña tart served with passionfruit ice cream and white chocolate.
Mayta is also a pisco bar. The restaurant moved to new premises in 2018 with a revamped interior and a fully redesigned menu, a change that set the course for its later rankings.
