The story
Restaurant Karel 5 serves classic French cuisine at Geertebolwerk 1, 3511 XA Utrecht, inside Grand Hotel Karel V. The restaurant holds one Michelin star (2026), and its kitchen works with a French-based menu that changes every three months.
Chef de cuisine Leon Mazairac runs the kitchen under the motto "simplicity is complex enough." Each season the menu is rebuilt with a new theme, layout and set of dishes, balancing classic technique with modern creativity. Gault&Millau gave the restaurant 16 points in 2026, citing light elegance and subtle flavours.
Reviewers have praised a starter of plum with North Sea crab and verbena, and a turbot Bordelaise served with a rich jus, shallots and marrow. A 2026 Lekker500 review also described a signature called Mensae Primae, built from twenty ingredients. Guests choose a four, five or six course collection, with wine pairing available as an add-on.
The dining room occupies a former 14th-century monastery refectory within Grand Hotel Karel V. Chandeliers, a coffered ceiling and tables dressed in white linen set the tone. In warmer weather, guests can dine on the terrace beside the cloister garden.
