The story
't Ganzenest is a modern French restaurant at Delftweg 58a in Rijswijk, on the edge of The Hague, and it holds one Michelin star in the 2026 guide. Chef-patron Erik Tas cooks here in a former golf clubhouse beside the Vliet canal.
Tas worked as a sous-chef in established restaurants before opening Bij Erik in Leidschendam and then 't Ganzenest. Lekker500 describes his food as light French cooking built on rich, high-quality ingredients, and ranked the restaurant 60 in 2026. The kitchen was rebuilt in summer 2023 and now has two chef's tables. One seats 2 to 8 guests, the other up to 3, and both serve the six-course menu.
The menu follows the seasons and opens with hamachi, umeboshi, jalapeño and buttermilk. Sweetbread with cauliflower, sherry and pancetta comes next, then North Sea sole with asparagus and peas. Cavatelli with parsley, broad beans and macadamia leads into lamb, with Wagyu A5 as a supplement. Dessert is strawberries with white chocolate, quark and basil. Before dinner there is a bites list of oysters in several preparations, among them calamansi with ponzu and crème fraîche.
The old farmhouse beams still run across the ceiling. Below them are a light herringbone parquet floor, white linen and generously spaced bucket chairs. Windows look out over a cow pasture, the water and the golf course. The wine list is large and ranges across the Old and New World. A cheese trolley rolls out at the end of the meal, with compote and nut bread alongside.
