The story
Restaurant Calva serves modern French cooking at Markt 53 in Nootdorp, in the Hague area, and holds one Michelin star (2026). Chef-owner Tom Beckers cooks in an open kitchen on the village square, where the dining room looks straight onto the pass.
Tom Beckers works in classic French technique with a modern touch, relying on fresh, mostly local produce. The five-course De Belevenis menu changes with the seasons, and the chef visits each table to talk through the dishes and any dietary wishes. Every menu opens with the signature bisque, a creamy shellfish soup served with rouille. Gault&Millau rated Calva 14.5 in 2026.
The wine list leans on sustainable producers, and the team pre-tastes each pairing before it reaches the table. The room is renovated, contemporary and spacious, with a relaxed, cheerful mood. A cheese trolley with flatbread and cranberry bread closes the meal.
