The story
Bøg at Prinsestraat 130 in The Hague is a Scandinavian restaurant that Gault&Millau scored 14 in 2026. The kitchen cooks New Nordic dishes built on smoking, pickling, curing and fermenting, with a menu that changes regularly.
Thomas van Voorst cooks, and Luc Rensen runs the dining room. The two friends trained together in Breda and now own the restaurant jointly. They source from local suppliers and travel to Denmark for inspiration. Thomas leans on bright acids and fresh herbs, which keep the dishes light. Diners can choose a meat and fish menu, a vegetarian menu, or a mix of both.
A recent meal began with homemade ricotta, pickled oak mushroom and parsnip cream. Leek rolls steamed in lemon came filled with veal tartare and mussels. North Sea mackerel, brined and then roasted, arrived with Livar pork belly and a charred beurre blanc. The dessert of pickled pear with toasted white chocolate, almond and malt sabayon closed the meal. The Michelin Guide lists Bøg as Recommended for 2026.
The long, narrow dining room is minimalist and warm. Wooden floors, cognac-coloured chairs and a wall in shades of blue set the tone. Tables alternate between round and square, and linen napkins sit alongside bronze cutlery boxes. The room suits an unhurried dinner, with the wine list limited to organic and biodynamic producers.
