The story
Restaurant Notable, listed under Sittard, sits at Plein de Valk 13 in Echt and serves an international kitchen built around an open kitchen and a chef's table. Gault&Millau rated it 14 in 2026.
Chef Vital Awick and sommelier Adriaan Visser previously worked together at Harry's in Maastricht. Here they receive guests on the first floor of a former roof tile factory, around an open kitchen with a natural stone bar. The chef's table is a high bar with stools, so the cooking happens right in front of you.
A five-course menu is the core, and it can be extended with pork belly and eel or an extra cheese plate. Dishes mentioned by Lekker500, which placed Notable in its 2026 Top 500, include roasted beetroot with goat cheese, black garlic and almond, and salmon tartare with miso, finished at the table with lemon granité. Cod with blood orange and caper beurre blanc follows, and dessert pairs pear with tonka bean. Wines by the glass are matched course by course.
