The story
Joelia, at Coolsingel 5 in Rotterdam, is a modern French restaurant that earned one Michelin star in 2026. The kitchen sits inside the Hilton Rotterdam, and the cooking is built on French technique with international and Asian touches.
Chef Sofiane Bons says he cooks outside the lines and serves what he would want to taste himself. The menu takes risks with pairings, such as Balfego tuna with caviar, buttermilk and kiwi, or red mullet in bouillabaisse with rouille. Gault&Millau kept Joelia at 17 points in 2026, crediting Bons and sommelier Pieter Timmer with steady service.
The Menu Persévérance costs €169 and opens with an amuse-bouche before the main courses. Texel lamb with wild garlic and chartreuse and wagyu A5 from Kagoshima with yuzu kosho are both on the set menu. À la carte, foie gras comes with winter truffle and brioche, and Le Jardin, a vegetarian course built on Coeur de Boeuf tomatoes, costs €35. Weekday lunch runs Tuesday to Friday, with a three-course menu at €82.50 and a four-course menu at €107.50.
The Wijnkamer, the restaurant's wine room, hosts private dining for two or for groups of up to 12. Its six-course Persévérance menu is priced at €285 per person before wine. Sommeliers pairing is €75 and prestige pairing is €150, and Pieter Timmer selects the bottles.
