The story
FG Restaurant at Katshoek 37B in Rotterdam holds two Michelin stars (2026) for an international kitchen run by chef-owner François Geurds. The dining room sits beneath the railway arches of the Hofbogen, on the old Hofplein line.
Geurds trained under Cees Helder and later worked at The Fat Duck with Heston Blumenthal. His Aruban mother, Ivy, taught him to cook, and her influence shows in the spiced appetizers and in desserts such as bolo pretu. The restaurant also runs its own flavor laboratory, which the house describes as the only one in the Netherlands. Gault&Millau rated the cooking 17.5 in 2026.
Celeriac barbecued on coconut wood is the dish most often described, finished with beurre blanc and a vinaigrette built from 43 herbs and spices. Wagyu appears in several forms across a meal, among them tartare and a shabu-shabu style broth. Reviewers also mention razor clams with eel, and the piccalilly ice cream that opens the menu. The sourdough is baked in-house from a seven-year-old starter.
The vaulted ceiling is painted green, and the high-backed leather swivel chairs give each table some privacy. Guests choose their own knife from a tray, and the kitchen is open. The wine list runs to 1,350 references and earned a Wine Spectator Best of Award of Excellence in 2022. The champagne selection passes 170 labels. A private dining room, designed as an inverted garden, seats smaller groups.
