The story

Restaurant Vesters in Nijmegen: French Cooking with Gault&Millau 14

Restaurant Vesters at Groesbeeksedwarsweg 307 in Nijmegen serves French-rooted cooking that earned 14 points from Gault&Millau for 2026. The small restaurant sits on the edge of the city centre, and its menu follows the season while keeping classical French technique as its base.

Chef and cooking style

Owner-chef Jeroen Vesters works from the French kitchen tradition, with Mediterranean touches and seasonal produce. Bread, amuse-bouches, sauces and pastries are all made in house. Sous-chef Lars Lamers works alongside him, and the menu changes with the market, so a dish may not return in the same form.

Standout dishes

Reviewers have singled out a tuna tartare served in dashi and a roasted veal tongue with a salsa of tomatillo, mole and pepitas. The current menu lists oysters with kombucha and lemon, a Provençal petit aioli with quail egg, and duck breast with miso-glazed aubergine, black garlic and a jus flavoured with Timut pepper.

Room and wine

The dining room feels like a living room, with linen-draped tables, a herringbone wooden floor and a felt-covered wall that softens the noise. Sommelier Nikolien Verstraelen runs the front of house and pours wines with explanations, and the list leans toward Old World bottles. Lekker500 included the restaurant in its Top 500 for 2026.

Located on the edge of Nijmegen's city center, the intimate restaurant Vesters offers a culinary experience in a stylish setting. The welcome is warm, and we are greeted with a broad smile. It makes for a very pleasant entrance. Owner-chef Jeroen Vesters cooks at a high level with a French foundation, complemented by international accents and seasonal produce. The evening begins with a beautifully balanced amuse-bouche, followed by creative, well-considered dishes. The tuna tartare in dashi is a textbook example of a strong start: flavorful, colorful, and refined with accompaniments of mixed mushrooms, duck liver mousse, and a cheese crisp. The spicily seasoned and roasted veal tongue in a salsa of tomatillos, mole, coriander, and pepitas is bold, yet perfectly executed, and a true flavor adventure. The guinea fowl fillet with asparagus and beurre blanc also demonstrates that classic flavors can still surprise when prepared to perfection. Not every dish hits the mark, however. The pearl barley with nettle pesto lacks balance and originality and pales in comparison to the rest of the menu. Nevertheless, the overall quality of the cuisine is thoroughly convincing. Service is a strong point: hostess and sommelier Nikolien Verstraelen is knowledgeable and attentive. The explanations accompanying the carefully selected wines genuinely enhance the experience. Vesters impresses with its excellent cuisine, attentive service, and pleasant ambiance. It is a restaurant where clear care goes into every detail, making it a genuine pleasure to dine there for an evening.

Huiskamerrestaurant on the outskirts of downtown Nijmegen. The atmosphere is wonderful; it is busy and cheerfully bustling. Owner-chef Jeroen Vesters and his partner, host and sommelier Nikolien Verstraelen, have been delivering the same top-tier quality in food, drink, and hospitality here for years. The welcome is warm, and we are seated at a neatly set round table in the middle of the dining room. Due to the crowds, we have to wait a moment for our aperitif, and the young waitstaff overlooks a few things here and there. But when the wine for the first course is poured, everything clicks into place and we lack nothing further. There is a fixed menu from which we can choose the number of courses we want. For the starters, we receive two combinations of fish and meat. First, a firmly seared corvina with anchovy paste and morcilla (fried blood sausage). Nikolien pairs this with a Domaine de Chevalier Rosé produced using the saignée method (slow and gentle pressing). Then, perfectly cooked octopus with crispy pork belly, ash-smoked cabbage salad, and a rich sauce of 'nduja (Italian spicy soft sausage). After a perfectly roasted veal loin as the pièce de résistance, accompanied by a subtle sauce of coffee and salted caramel, comes a sweet dessert and a cheese board. On the pre-selected cheese board, the decadent triple-cream Denice de Bourgogne and the hard Leiden key cheese with cumin stand out. Nikolien has the lovely habit of pouring not one but two accompanying wines with the cheese. Simply because she feels that one flavor does not cover all bases. We enjoy a Chenin Blanc from Vouvray in the Loire Valley with a delicate hint of honey. Marsala dolce is the other. A fortified wine from Sicily with the color of dried moss. Bravo!

The friendly, living-room-style restaurant Vesters has become an indispensable fixture in the columns of this guide. This is hardly surprising, as owner-chef Jeroen Vesters and his partner, hostess and sommelier Nikolien Verstaelen, are dedicated to giving their guests an unforgettable culinary experience. They succeed on every front with exquisite dishes and fine accompanying wines. The interior is warm, featuring linen-draped tables, luxurious wall paneling, and vases filled with fresh flowers. Jeroen cooks classical French cuisine using seasonal produce. The modest menu lists several dishes that can be combined to create a custom tasting menu. The wine list features attractive labels and offers the option to choose a pairing set. Non-alcoholic beverages are also available. After some palate-awakening amuse-bouches and delicious sourdough bread served generously, we begin with beef tartare blended with poached oyster, seasoned with timut pepper, accompanied by tomato jelly with grapefruit, slivered almonds, and green tomato. Nikolien pairs this with a delicate 2020 Celler del Roure, Les Prunes, Blanc de Mandó. Next comes a squab, gently and tenderly cooked with puffed buckwheat, smoked paprika, Tomberry tomatoes, artichoke cream, and an excellent jus made with coffee and madeira. Served separately is a small waffle with pigeon rillette, black olive, and tomato. Absolutely delightful. Visually stunning is the dessert of raspberry and pickled cherry, featuring a crèmeux and ice cream of raspberry and kombucha, verbena gel, fennel meringue, and pistachios. Such beauty deserves a bow and applause.

Owner-chef Jeroen Vesters and his partner, hostess and sommelier Nikolien Verstraelen, both master the art of treating their guests to a wonderful evening through exceptional food, wine, and hospitality. Their cozy, living-room-style restaurant is tucked away in a residential neighborhood near the city center. We enjoy a chic yet relaxed atmosphere, seated comfortably while admiring a striking artwork of a hare on the wall. Vesters crafts the finest dishes from classic French cuisine using seasonal ingredients. We start with a 'fort' of upright, perfectly cooked asparagus spears, beneath which we discover a smoked egg yolk like a hidden treasure. Rich and silky! Especially delightful when paired with the full-bodied white Gavi in our glasses. Next, we savor buttery-tender lamb loin served with three distinct preparations of peas, mint, green asparagus, sumac, and red wine jus. Our skilled and friendly server accompanies it with a velvety Italian red, Lacrima di Morro d’Alba. Pure enjoyment! To finish, we indulge in a rhubarb tartelette with juniper berry ice cream and iced tea, matched with a fitting cocktail of cava and rhubarb syrup. The dining experience here is excellent, generous, and packed with quality. An absolute gem in Nijmegen.

Over the years, Jeroen Vesters and Nikolien Verstraelen have established a solid restaurant on the edge of Nijmegen's city center. Vesters is a lovely spot and a constant presence in this vibrant neighborhood, as the cozy, living-room-style restaurant has become an integral part of the area. The atmosphere is informal, the interior is very well-kept, one wall is covered in felt for acoustic purposes, and there is an open bar. It is always filled with couples and small groups of friends. The charming hostess Nikolien seems able to read her guests, as she knows exactly how to make everyone feel perfectly at ease. Communication is relaxed and friendly. Beautifully plated dishes come from the kitchen, based on French cuisine. Bread, amuse-bouches, entremets, sauces, friandises... everything here is made in-house. For the starter, there is dorade tartare wrapped in a paper-thin slice of kohlrabi, served with ham, sherry vinaigrette, black garlic, alegranza cheese, and a romesco of red pepper, peeled tomatoes, almonds, and pepper. It is highly flavorful and beautifully balanced. This is followed by a softly cooked roulade, presented in a gorgeous rosy-pink color and garnished with pistachios. The recommended glass of Badense Spätburgunder Merdinger Bühl pairs harmoniously with it. The house-made pastries are, in a word, heavenly. We are truly glad that Jeroen chose the culinary profession over becoming a rock star back then!

A regular fixture in this guide for years. The charming husband-and-wife team, owner-chef Jeroen Vesters and his wife, sommelier Nikolien Verstraeten, know exactly how to maintain their consistently high standards. You feel right at home in their welcoming living-room-style restaurant on the edge of Nijmegen's city center. A herringbone wooden floor, generously spaced tables set with care, adorned with sparkling glasses, beautiful candles, linen napkins, and lovely flower bouquets everywhere. The menu features dishes from classical French cuisine with Mediterranean and modern influences. Ingredients are used as purely as possible, and on the plate—also prepared by sous-chef Lars Lamers—you will find no mousses and foams, but rather plenty of recognizable textures and structures. The plates leave the kitchen generously portioned and beautifully presented, while the accompanying wine pairings reveal thoughtful selections aimed at an optimal wine-and-food experience. The European-focused wine list emphasizes France, while the team deliberately incorporates lesser-known European wines and grape varieties into the pairings. Nikolien Verstraeten on the pandemic: "From the very first week we were closed, we launched the 'Vesters at Home Menu'. These premium meals had to be finished at home using instructions and a YouTube video. Guests responded very enthusiastically. We even received fan mail and letters from people who said the Vesters at Home meals were the highlight of their week! Additionally, during the coronavirus crisis, we sold significantly more 10-dinner voucher books. (These are dinner vouchers: 10 x 5 courses with wine pairing, totaling a 17% discount.) Furthermore, we removed the à la carte option from the menu, which has worked out really well. Do we have hobbies besides our work? Yes, fortunately we do. Jeroen plays guitar, plays football, and loves doing DIY projects around our house. I practice yoga, go running, garden, and do pottery." Kudos to the hospitality of wine expert Nikolien, hostess Marleen Lamers, wine expert Sabine Ebben, and the rest of the team. Because they master the art of making guests feel more than welcome throughout the entire evening. And that’s just really nice.

Owner-chef Jeroen Vesters and his wife, sommelier Nikolien Verstraelen, have been running this place for quite some years, and you can tell in their atmospheric, homey restaurant on the edge of Nijmegen's city center. It feels relaxed yet undeniably professional. We get to pick our own table and are soon treated to exquisite amuse-bouches like kimchi with a licorice foam and fried belly pork: fresh, umami, salty, and earthy. The modest menu features dishes from classic French cuisine with modern influences. The wine list is extensive and leans heavily toward Old World wines. The delicious bread comes from 'Brood op de plank' in the Nijmegen neighborhood of Bottendaal, which delivers fresh loaves daily to Vesters. For the starter, there’s corvina tartare with goat cheese cream, beetroot, and freshly shaved bergamot right at the table. Absolutely flawless. Paired with it is a French Chenin Blanc from Brochet. The pièce de résistance is pan-seared cod fillet with smoked milk foam and three preparations of cauliflower and samphire. Every bite is a delight. Crispy almond potatoes are served on the side. In the glass, a beautifully complementary French Chardonnay from III B & Auromon. We wrap up with a fresh and fruity dessert featuring rhubarb, pink pepper, tonic, grapefruit ice cream, and yogurt mousse. We are thoroughly pleased. This is a spot where everything aligns perfectly: the wine, the food, the ambiance, and the service.

This welcoming, living-room-style restaurant run by owner-chef Jeroen Vesters and hostess Nikolien Verstraelen has long been a household name in Nijmegen. During our aperitif, we enjoy a small bowl of Caesar salad featuring quail eggs, parmesan foam, anchovies, avocado, and chicken—a true palate opener. The bread is fresh and served with cultured butter, olive oil, and sea salt. The first course consists of pollack in a buttermilk jus, accompanied by foie gras, various textures of cauliflower, oyster leaf, and matching mayonnaise. The presentation is visually stunning, though the salty-sour cauliflower is somewhat overpowering. Sommelier Marleen Lamers pairs it with an elegant 2016 white Spätburgunder (blanc de noir) from the Baden winery Baron von Maydell in Germany. The main courses feature black-legged chicken fillet with livers, truffle, morel jus, and parmesan foam, alongside turbot with walnuts, hollandaise sauce, ham, and cabbage. Both dishes could benefit from a touch more seasoning. We conclude with a rich and full-flavored cheesecake served with chocolate ice cream, chocolate crumble, hibiscus, and blueberries, which we devour down to the very last crumb.
