The story
Flores is a contemporary Dutch restaurant at Kelfkensbos 43 in Nijmegen, and Lekker500 placed it in its Top 500 for 2026. The restaurant grew out of a family coffee house on the same site, and it still cooks with produce from small growers, foragers and fishers.
Fermentation shapes most of the kitchen's work. The team uses it to deepen flavour, extend shelf life and use leftover streams. Koji, a Japanese mould culture, is the signature. The house line Koji Kult brines, smokes and ferments carrot, beetroot and turnip into plant-based charcuterie with a savoury, almost meaty depth. Head chef Luuk Freriks leads the cooking.
Dinner is served as a multi-course menu, from four to six courses, and the dishes change with the season. The menu can be made fully vegan or include fish and meat. Aged côte de boeuf is available as a supplement. Fish and meat come from natural hunting and sustainable fisheries where possible.
Gault&Millau awarded Flores 14 points for 2026, citing its natural wine list and organic, sustainable approach. The wine cellar focuses on small producers working naturally, biodynamically or organically. A non-alcoholic pairing uses the kitchen's own fermented juices made from vegetables, fruit and tea. The restaurant has roots in 1953, when the owner's grandparents opened a coffee house, and his parents took it over in 1980.
