The story
Morille, at Biggekerksestraat 3 in Koudekerke near Middelburg, is a modern cuisine restaurant listed as Recommended by the Michelin Guide in 2026. Chef Floris Vriens cooks a largely botanical menu drawn from the restaurant's own vegetable garden, foraged finds and growers on Walcheren.
Morille opened in 2019 and takes its name from the morel, founding chef Dennis Willems' favorite discovery. Floris Vriens took over the kitchen in 2024. The cooking still starts with the garden, the dunes, the fields, the sea and the forest. Meat is local, and fish is served only when it is verifiably sustainable. Gault&Millau gave the restaurant 13.5 in 2026 and points to the aim of using products from within 15 kilometers.
Dinner is five or seven courses, preceded by five amuses. Reviewers have described potato gnocchi with red and yellow beetroot and a bay leaf beurre blanc. They also mention charred pointed cabbage on a cream of shiitake and meadow mushrooms with wild garlic emulsion. The current menu lists kingfish with ajo blanco, langoustine and asparagus. A lobster menu with Zeeland lobster from the Grevelingen is available by reservation.
The wine list leans toward cool-climate bottles, mostly from the Netherlands and Belgium. Sommelier Quitéria suggests a glass for each course. Guests who skip alcohol get house-made juices from local vegetables, fruit and herbs, matched dish by dish. Vegetarian guests can have the menu adapted if they say so when booking.
