The story
Ambrozijn in Maastricht is a modern French restaurant at Plenkertstraat 45, Valkenburg, where owner-chef Sven Nijenhuis cooks inside a former church. Gault&Millau awarded it 15 points in 2026.
Sven Nijenhuis runs the kitchen with his wife, Joëlle Nijenhuis-Boessen, who looks after the room. The multi-course menu can be extended with caviar, foie gras or lobster. Reviewers single out sea bass with jalapeño ceviche, grapefruit jelly and puffed quinoa, and a red mullet served with anchovy-saffron jus. The French kitchen favours balance and precision, pairing classic technique with newer ideas on the same plate.
The restaurant occupies the Irene Church, built in 1891 and fully renovated. Every table looks onto the open kitchen, and the large chef's table that surrounds it seats eighteen guests. A mezzanine and an organ bar overlook the room. Lekker500 placed Ambrozijn in its Top 500 for 2026, noting that the restaurant sits on the threshold of its Top 100.
